Friday Food Porn #5: No Cook & Some Cooked,Too

It stayed hot in the first part of the week, and then the temps have plummeted to almost fall-like temps. Or maybe Indian summer. I’ve actually had to wear a jacket while walking the dogs the last couple of mornings!

Cooler weather & more sleep = baking mojo partially bake. Along with some really yummy no bake recipes.

Purely Twins Plaintain Cinnamon Rolls
I actually made these last week, but I ate them this week so it counts, right? Another tasty disaster.

Purely Twins are just the queens of plaintains. And I wanted to make my husband sometime nice for when he got home.

I’m not sure why, but the dough remained too sticky to roll out. So I put half the dough in the pan, topped it with the cookie dough, topped that with the other half of the dough & cookie dough & sprinked that with the cinnamon/sugar (why I didn’t put that in the middle I don’t know).

They came out rather dense, but still tasty. They reminded me of a dense chocolate babka. I will definitely have to try this recipe again some day.

OMG. You must make these. You don’t even have to turn on the oven.

I did have to go out and buy some graham crackers, but I had the rest of the ingredients on hand. The recipe makes a lot of cookies, but they won’t last long.

My husband liked them too, & he’s a tough critic.

They were definitely fantastic after my speed work on Tuesday. And maybe my tempo run yesterday. Just might be what got me through that run. Just sayin’.

Purely Twins Plaintain Pizza Crust
I was able to borrow Purely Twins’ little plaintain ebook on my kindle.

If you read these posts, you know I am willing to try lots of interesting stuff. I already like Purely Twins’ plaintain waffles, bread, & more. This ebook contains recipes you can get on their Website (which is why the heading is a link to the recipe), but it’s nice to have them all in one place and I paid for it yesterday.

I liked this, my husband wasn’t terribly enthusiastic. His exact words were he’d eat it again if he had too.  I will be making it again!

No Bake Stuffed Peppers


I read this recipe on somebody’s blog and then totally forgot which blog it was. If it was yours, please let us know! So I winged it:

1 bell pepper
1/3 cup feta cheese
1 oz kalamata olives
1 tbsp olive oil
1/2 tbsp balsamic vinegar
Chopped cilantro
Grape tomatoes, halved

Cut the  pepper in half lengthwise & scoop out seeds & membranes.

Toss the rest of the ingredients together in a bowl, spoon into the pepper, & enjoy. Doesn’t get a lot simpler & healthier than that, folks.
