Friday Food Porn #10: Who doesn’t love breakfast for dinner?

Breakfast for dinner. Breakfast for lunch. Second breakfast. I really love me some breakfast! I seriously could eat it at every meal — how about you?

Smores Pancakes
Yeah, I went there after my 9 mile LSD. Thank you, MCM Mama Runs, for those delicious looking smores waffles on IG to give me the idea.

I used the single serving brownie pancakes from Chocolate Covered Katie as my base. And then I just threw in mini marshmallows and some gluten free graham cracker bits (I have the GF graham crackers on hand for the smores protein cookies I now make on a regular basis — see this Friday Food Porn for a photo and the link).

The graham cracker just seemed to disappear into the pancake. I think next time (and you know there will be a next time) I’ll try putting them into the pancakes as they bake, rather than mixing them in the batter.

Blogilates French Toast Roll Ups
I had to take the dogs to the vet mid day, and I knew I’d be hungry between my run and the time I got home. I’d planned a snack, but then I decided to go a different way and make these french toast roll ups.

Really glad I did and I will most likely make them again. I subbed 1 tbsp coconut sugar for the stevia and used real cream cheese. I actually think you could lose the sugar altogether and just dust them with some cinnamon. I also think cream cheese and jelly inside would be good; nut butter would probably be fantastic; I’m not a PB&J gal, but that would be good, too. I used Ezekiel Cinnamon Raisin Bread.

I liked these so much I ended up making them for dinner the next day, too. With nut butter & chocolate chips. Because what isn’t better with nut butter and chocolate chips?

Grilled Cheese (Cauliflower)
Unless you’ve been living under a rock, you’ve probably heard of cauliflower pizza crust. And yes, this is just another riff on that.

Cauliflower + cheese + getting in half a head of cauliflower at lunch — sounds good, doesn’t it?

And it is good. It’s just a lot of work for not a lot of product.

Chocolate Dessert Pizza
This dessert pizza is what I made for our Labor Day dessert. When I asked my husband what he thought he said it tasted kind of sour. He was right – the chocolate pizza base, that is. I’m not sure why. Really not much in there to go sour.

The rest was awesome and we both ate it with no problems (during or afterward).

Purely Twins Protein Thin Mint Cake
Did I want to make this recipe? I was a little scared, I admit: it sounded like a very weird combination of ingredients. I’ve shied away from psyllium powder for years. When was the last time your grandma ate pysillium?

And I’ll be the first to tell you — my husband would never like this. I wouldn’t say it was great, either. But  . . .  sometimes you need something that’s healthy and chocolate and doesn’t have a lot of sugar.

I added the frosting, which is just coconut butter thinned with some water.

Will I make this again? I’m not sure. It sure did keep me full for hours, though!

Skinnytaste Turmeric-Garlic Shrimp
I didn’t think to take a photo of this dish. And I just use the spice mix for the shrimp and haven’t made the Cabbage-Mango Slaw yet. But we’ve been grilling shrimp this way all summer and it’s really yummy!

I just marinate the shrimp in:

  • 2 cloves garlic, minced
  • 3/4 tsp turmeric
  • 1/4 tsp cumin
  • 1 tsp sea salt
  • 1 tbsp olive oil

Then we grill it. Easy peasy.
