Friday Food Porn #4: Easy Eats

With my husband gone on a business trip for 2 1/2 weeks, I was free to eat what I like (which is quite different from what he likes). Of course then it decided to heat up & some sleep deprivation was thrown is, so easy eating was the name of the game — often.

Another recipe from the cookbook Everyday Detox. I swear I have no affiliation with the website! But I enjoy Megan’s recipes, obviously.

Essentially it’s salmon covered in a dijon mustard maple syrup mix and broiled. Easy & tasty.

Another easy snack/breakfast I make often. Very filling.

1/2 – 2/3 c cottage cheese
Berries
1/2 tbsp maple sugar
Scoop greek yogurt
Optional: chocolate protein powder, chocolate chips, vanilla, cinnamon

Mix a little of the maple sugar with the berries & set aside for about half an hour for the berries to release their juices.

Mix remaining sugar with cottage cheese. Top with berries (and the juices), any add-ins, and a dollop of greek yogurt.

Most of the strawberries were from my garden, too – win!

I hear people say all the time they don’t have time for breakfast. It doesn’t have to take a lot of time!

I was able to borrow Purely Twins’ little plaintain ebook on my kindle.

This recipe was kind of genius and maybe the easiest of this week’s recipes & I’ll definitely be making it again.

Toss 1 plaintain with some coconut oil.
Bake at 350 for 30 minutes.
Top with pizza sauce (I just used tomato paste) & favorite pizza toppings (I just used some mozzarella).
Bake an additional 10 minutes or until the cheese is melted.

Zoodles = zucchini noodles.

The alfredo sauce is basically cauliflower + almond milk. While you’re not going to mistake this for Pasta Alfredo, it is oddly comforting and filling. And did I mention easy?

  1. You’re making me hungry. I was only home for dinner one night this week and my hubby said it was too hot to cook so we went out to eat.

    1. You have the best metabolism! I seriously just can’t go out to eat too often. But most of these really are easy. Occasionally I have popcorn or ice cream for dinner, too. Did you go to the crossings yesterday? I had to pick up my husband at the airport, which is why I couldn’t meet up with you.

    1. My husband used to travel a lot, but now not so much. This is the first business trip that I didn’t go with him in a year, I think.

      I’ve always liked cooking for one. Lots of leftovers!

  3. I’m hung up on strawberries from your garden – that would be amazing! We’ve been grilling salmon using a similar “recipe” – so delicious. I go through stages of liking/not liking cottage cheese, but that breakfast sounds good.

    1. This is the first time I’ve actually been successful with strawberries. They weren’t all from my garden, but about 3/4 were – several days’ worth of harvesting

      I just have 2 raised beds that are way overcrowded. I’m hoping to get more for next year.

      I used to garden a fair amount but it took me a while after our move (6 yrs ago) to feel the urge again.
